La Oveja Negra (“The Black Sheep”) Manchego cheese is the product of a farm owned by three brothers – Francisco, Luis and Javier Parra – in the village of Las Mesas, Spain. Their cheese is crafted in the traditional manner passed down from generation to generation in La Mancha, where their distinctive herd of black sheep play an important role in the cycle of the land. Today, the Parra Family’s cheesemakers incorporate these ancient regional traditions with the latest technology to create their intriguing, buttery cheese – the first Organic Queso Manchego available to the United States market. Now available in two versions: Original (aged a minimum of 3 months) and Curado (aged a minimum of 6 months).
